[Week 9] How to Quick-Pickle Anything + 6 Recipes to Make This Week
Tomatillos — help! Plus: Potatoes, Eggplant, Corn, Tomatoes & More
Hello Farm Share Friends:
A few days ago a friend dropped off a dozen jalapeños from her garden. We were just about to head out of town for the week, and I didn’t want them to go to waste, so I sliced them up, pulled out a small pot, and made my favorite, simple quick-pickle brine.
The recipe I use comes from David Lebovitz, and it takes no time to make: bring equal parts water and vinegar to a simmer with a little sugar and salt; then pour the brine over the vegetables.
That’s it. It doubles, triples, and halves well, so you can adjust the recipe easily to whatever amount of vegetables you have on hand — often I make 4 or 6 times the recipe.
I use this brine with carrots and cauliflower …
… jalapeños and …
… onions, beets, turnips, radishes, cucumbers, kohlrabi ... everything.
I find pickling to be as helpful a technique to turn to when I am overloaded with certain vegetables (radishes! turnips!) as when I am underloaded (a single fennel bulb, for example, or two small peppers).
Pickling is a great way to buy yourself time when you can't quite get to cooking all of those summer gems, and pickles are so nice to have on hand — what sandwich, taco, pizza isn't made better, brighter by a little quick pickle?

Grilled Vegetable Tacos with Tomatillo Salsa In short: grill ALL of your vegetables, chop them up, combine them, then tuck them into tortillas and top with tomatillo (or other) salsa as well as any other fixins you like: pickled jalapeños, radishes, onions, cheese, crema, etc.
Crispy Oven Fries: I make these oven fries year-round at least once a week, but never are they better than when made with the farm share potatoes.
Simple Stovetop Green Beans We are not expecting green beans this week, but it’s possible that you are or that your garden is exploding with them, and if either of those is the case, this is a great low-effort, big-reward recipe to know.

Late to the party for tomatillos, but I had to chime in about a recipe I recently found for Chow-chow that uses tomatillos. It's such a nice crunchy side to offer at the dinner table.
