For tomatillos, try Kenji's chile verde from Serious Eats. A decent amount of work but it's sooooo good. My husband made it for a chili contest and it beat out a dozen other entries.
Loved your recipes! Have you ever tried making a salad with watermelon, fresh tomatoes, red onions and cucumbers? The dressing is your typical balsamic vinegar, olive oil, salt and fresh black pepper. The special addition to the salad dressing is tarragon. This wonderful but underused herb will give this delicious summer salad a delicate liquorish taste. Hope you try it.

Your email could not have come at a better time it’s monsoon 110+ weather and I’m not terribly creative with dinner. The salad sounds wonderful and I will pick up some peaches to go along with my usual grocery haul of veggies. We’ve been lucky the blueberries and finally the strawberries have been delicious. I love the KAF buttermilk waffle recipe ... I use the one that has a little bit of almond flour in it. The kids love it. Thank you for your kind words! And I love TJ's white balsamic, too. So good.

I line my roasting pan with parchment paper and put my pan on the grill. Low heat and it doesn’t heat up the house. This is the best little freezer package for the wintertime
