[Week 7] Salads on Vacation, A No-Recipe Dressing + 6 Recipes to Make This Week
Tomatoes, Potatoes, Eggplant, Margaret Roach, Zucchini Tortillas & More
Hello Farm Share Friends:
I’m writing from Lake George, where we are for the week with my husband’s family. There are 13 of us total and, as a result, getting dinner on the table is a nightly group effort. I’ve been on salad duty for the week and rather than rely on leafy greens tossed with one of my favorite dressings, this week I’ve opted to make chopped salads dressed with another reliable formula: a 1:1 drizzle of olive oil and white balsamic vinegar plus sea salt and freshly cracked pepper.
The vacation salad pictured above is a chopped mix of everything I’ve had on hand — bell peppers, tomatoes, cucumbers, snow peas, nectarines, peaches, strawberries, and avocados — dressed as noted above, then dotted with blobs of burrata, which I found at the local Tops (and then danced a little jig).
What does this have to do with farm share produce? Well, this week our farm share is showing signs of transition, shifting away from all the leafy greens, moving into later-season produce territory: we’re expecting potatoes, tomatoes, and eggplant this week and corn, carrots, and bell peppers next.
All of these vegetables would be great additions to no-recipe chopped salads. Before adding to a chopped salad, I would boil the potatoes with lots of salt, I would strip the corn kernels from the cobs, and I would roast or grill the eggplant, but for everything else, a rough chop would do.
Should you be receiving similar items in your share this week, consider giving your favorite dressing a vacation of its own, and try the no-recipe formula. I’ve been finding the easy breezy assembly liberating but no less delicious. I hope you do, too.

Earlier this week I chatted with my friend Margaret Roach, who many of you gardeners likely know. If you are unfamiliar, Margaret is the master gardener behind A Way to Garden and the eponymous award-winning book. She also is the funniest Instagramer I know.

6 Recipes to Make This Week
If you receive potatoes this week please make Ali Slagle’s Crispy, Potato and Cheese Tacos: these truly come together in under 10 minutes, and they are so, so tasty. I still have some garlic scape pesto on hand, and it’s been such a nice condiment for many dishes, namely eggs.
Zucchini Tortillas (4-Ingredients, Baked, Gluten-Free): These are a new discovery and such a fun and tasty one, too.
Deb Perelman’s Quick Zucchini Sauté (So fast and tasty!)
Cilantro-Lime Chickpeas (You could use parsley or basil in place of the cilantro or in combination with the cilantro.)
Simple Tomato Salad, no recipe here: Simply season with salt and pepper, and drizzle with olive oil and balsamic at a 1:1 ratio. Add herbs if you have them and cheese such as feta, burrata, or mozzarella.
