[Week 1] Three Go-To Salad Dressings + Six Recipes to Make this Week
Lettuces, Squash, Bok Choy, Broccoli, Basil & More
Farm Share Friends: it’s here! The first farm share of the season. I pick up my vegetables this afternoon, but thanks to the newsletter from Roxbury Farm yesterday, I know I’ll be receiving lots of greens (head lettuce, kale, arugula, Swiss chard) as well as summer squash, broccoli, bok choy, basil, scallions, and cucumbers.
And so, topping the to-do list is: make salad dressing. Here are three I love:
This lemon vinaigrette is great for the more tender lettuces such as the head lettuce and arugula (and actually the Swiss chard, too).
This shallot vinaigrette is great for both tender and hearty greens:
And this tahini dressing (as well as this cashew dressing) is great for heartier greens:
As noted in the 3 Tenets email I sent out over the weekend, you’ll want to use those tender lettuces early in the week. I’m planning on making salads for the next three days with the lettuce, kale, and arugula. I’ll use the cucumbers and scallions in those salads, and I’ll throw some basil leaves in there, too. I’ll save the heartier vegetables for later in the week. Here’s my rough plan:

Broiled Broccoli with Sesame-Scallion Sizzle. I love this broccoli with this warm tofu recipe.

I put my radishes in the air fryer on a whim. I sliced them in half (they were quite small) sprayed them with olive oil and air fried on 400 for about 8 min. They got all toasty and I gave them a heavy dose of salt. They were great.
