Thank you, Wayne and Domenica! Definitely not traditional, and I can finally say I have tasted the real deal traditional carbonara, which was as dreamy as I imagined.
WOW, I absolutely remember the Everyday Food Magazine. It was the best, with tips and really creative recipes. In fact, every month I would cut out our favorite recipes and I actually made a small recipe binder (from Hallmark) totally filled with Everyday Food recipes. I use that little binder all the time. I miss that magazine so much.
First, loved Food Everyday, it was tragic when it folded.
I made enchiladas tonight using a ton from the garden. First made a slightly altered version of your enchilada sauce. For the filling I sautéed an onion, then put in a chopped garden hot pepper and a few cloves of chopped garlic. Once they were soft I added a half pound of large diced cremini mushrooms and cooked until they were nice and brown. Next in were cubed sweet potatoes that I had cooked until soft and I let cook for a bit. Last in was spinach and that was cooked until wilted. I salted and peppered with each layer. I rolled the corn tortillas with the filling and pepper jack cheese.
Erinn, this all sounds fantastic! And so nice for fall, too. I have a ton of tomatoes on hand still, and I'm planning on making the enchilada sauce + tortilla casserole today or tomorrow. Thanks for writing and sharing :)
I LOVED that magazine. I would have saved them if I knew it would be discontinued. Like a readers digest of recipes! I haven’t found anything similar except now I just buy or checkout cookbooks. Thanks for the recipes!
Right?! It was such a nice size. I tore out a number of recipes over the years, and I've tucked them into random cookbooks, so I stumble upon them here and there, and it always is such a nice surprise.
