[Week 5] Raw Snap Pea Salad, Turnip Burgers, Zucchini Bread + 6 Recipes to Make This Week

Cucumbers, Greens, Summer Squash & More

Hello Farm Share Friends:

With the arrival of snow peas in this week’s share, I am very much looking forward to making this salad with buttermilk dressing, one of my favorites to make when both snap and snow peas are abundant.

What’s most interesting to me about this salad is its assembly: You toss slivered snap peas with lemon zest, salt, and olive oil, but no acid. All of the acid comes from the dressing, a mix of buttermilk, yogurt, fresh lemon juice, and garlic. You don’t ever toss the dressing with the snap peas, rather you heap the snap peas atop the dressing. As you serve, the dressing and peas unite.

If you find yourself with a small-ish quantity of snap or snow peas, you could combine them with thinly shaved radishes, summer squash, or cucumbers. They also are a great addition to any salad, such as this spring fattoush salad or this simple cucumber salad.

You could also simply eat them raw, one by one, on your drive home from picking up your share, which is no doubt what I will do.

Friendly reminder: onion greens and turnip greens can be used in recipes such as these fritters or these meatless balls. Or you could use the turnip greens and bulbs to make turnip burgers, a how-to video for which is above.

As noted in the video, this turnip burger recipe is a great way to use up a ton of farm share or CSA produce.

Chopped Thai Satay Salad with Ginger-Peanut Dressing: Love this dressing.

Simple Sautéed Greens: This is a great basic recipe to use for greens such as kale, Swiss chard, mustard greens, and escarole.

Crispy Chicken with Herb Sauce

Sushi Salad with Miso Dressing: If you make a big batch of brown rice, you’ll have enough for both the turnip burgers and this sushi salad, which will make good use of your farm share cucumbers, scallions, and tender greens.
