[Week 3] Fried Green Meatless Balls, Another Approach to Garlic Scapes + 6 Recipes to Make This Week
Beets, Cabbage, Turnips, Lettuces, and More
Hello Farm Share Friends:
Sometimes weeks don't go as planned and Tuesday rolls around and you realize you have a heap of greens on hand with more on the way later that day. When this happens I often turn to this Cal Peternell recipe from his book Twelve Recipes: Fried Green Meatless Balls.
The beauty of this recipe is that you can use ANY green in it: beet greens, turnip greens, carrot greens, onion greens, kale, Swiss chard, mustard, etc.
I’m planning on making these meatless balls tonight with the beet and turnip greens arriving in today’s share along with the Swiss chard and the remaining scallions from last week’s share. In place of the garlic, I’ll use a few tablespoons of garlic scape purée … more on this in a second.
You can serve the meatless balls with nothing more than a squeeze of lemon, but they're also great with tzatziki, which would put to good use any of those farm share cucumbers you might also have on hand.

Note: While this is not a huge production, it is not necessarily a weeknight meal either, so if you're pressed for time, save this for another day. It's the kind of thing I prefer to make on a Sunday when I have a little bit more time.
Garlic Scapes, Part Two
We are expecting more garlic scapes this week. I shared a few thoughts last week but I forgot to mention another approach you can take, which is to purée them, then use the paste as you would minced garlic. I find having the purée on hand to be a real time saver — it’s much faster to scoop out a spoonful of the purée than to mince the scapes every time I need them.
Be sure to store the purée in an airtight container. It's fragrant — your fridge will smell a little garlicky 🧄🧄🧄🧄🧄
