Hello Farm Share Friends,

With last week’s arrival of green tomatoes, we should have known: this week we officially say goodbye to tomatoes, whose season always passes too quickly.

Thank you to all who submitted green tomato recipe suggestions. I actually have yet to do anything with my green tomatoes — my fridge broke last week, which caused some disruption to the cooking schedule — but I am grateful to now have a plan: I’ll be breading and frying half of the green tomatoes and serving them alongside some sort of ranch-flavored yogurt or labneh sauce, and I’ll pickle the remainder, which I’m told will make a great martini or Bloody Mary topper. Can’t wait.

And while we say goodbye to tomatoes this week, we welcome cauliflower (🎉🎉🎉). I never tire of cauliflower and, in particular, I never tire of this parmesan-roasted cauliflower.

It’s simple: toss cauliflower florets with a sliced onion, a few sprigs of thyme, whole unpeeled garlic cloves, olive oil, salt, and pepper. Roast for 30 minutes or until the onions and cauliflower begin to brown, then sprinkle over parmesan cheese, and return to the oven for 10 more minutes. That’s it.

The cauliflower emerges tender and golden, tangled in a web of sweet, caramelized onions and crisp, nutty parmesan. It’s irresistible. The best part? The whole unpeeled cloves of roasted garlic, which can be spread across bread like butter. I hope you love it as much as I.

The greens have returned to the weekly farm share, and as a result, I’ve gotten back in the habit of making salad dressings, namely this apple cider vinaigrette, a new favorite, as well as this lemon vinaigrette.
